Preheat broiler. Lightly brush baguette slices with olive oil. Toast under broiler for about 1 minute or until just beginning to color. Spread Boursin® Cheese over warm toasts, dividing evenly. Return to broiler for 1 minute, or until Boursin® is soft.
In large salad bowl, toss mixed greens with vinaigrette dressing. Divide between four salad plates and top each one with 3 warm Boursin®-topped toasts.
To be more adventurous, use your favorite salad ingredients. The toasts, alone, also make a super-easy appetizer. Serve as they are or top with tapenade, diced tomatoes or thin strips of roasted red peppers.
