Delicious roast chicken starts with juicy white and dark meat. For great results, lift up all the skin – starting from the neck – with a spoon. Then place a plain or flavored fatty ingredient, such as butter or soft cheese, beneath it. Give the whole chicken a final rub down before placing it in a hot oven (425oF) for 15 minutes. Then reduce the temperature and cook until done.

For golden-brown, crispy skin, make sure to baste the chicken regularly while it cooks. Use a spray bottle filled with chicken broth to avoid burning yourself while you turn the roasting pan in the oven.
