Mayonnaise is an emulsion of oil droplets in water provided by the egg yolk and mustard. Water and oil do not naturally combine, this emulsion is stabilized by a protein found in egg yolk. With these basics you can now make mayonnaise variety in which the oil will be replaced by a fat cheese like Boursin® or even melted chocolate, also a source of fat!

For cholesterol-free mayonnaise, add only the whites of your eggs in your preparation or better, edible gelatin, these two ingredients have the same protein that stabilizes the emulsion yellow.
