Stuffed Pan-fried Pork Chops with Wine Sauce

Prep
  • Using the tip of a chef’s knife, cut a pocket in each pork chop leaving 1/2" of meat all the way around.
  • Combine Boursin Cheese and diced apples in small bowl.
  • Dividing equally, spoon cheese mixture into each chop pocket.
  • Season chops with salt and black pepper.
Cook
  • In large skillet, heat olive oil until it shimmers.
  • Add chops and cook 2 minutes until brown on first side.
  • Flip chops, reduce heat to medium.
  • Cover and cook for 8 minutes.
  • Remove chops and keep warm.
Combine and Serve
  • Heat stove to medium-high.
  • In the same skillet, add chicken broth, wine, and mustard.
  • Cook, stirring constantly until reduced by half.
  • Add parsley.
  • Spoon sauce over chops.
  • Serve immediately.

Tip

When buying pork chops, make sure they are light pink in color and contain a small amount of marbling throughout.
