Figs with Pepita Brittle

with Boursin Cranberry & Spice Cheese

Cook
  • Heat sugar and water in small saucepan over medium-heat.
  • Cook without stirring, until amber in color, about 5 minutes.
  • Occasionally brush down sides of saucepan with a pastry brush dipped in cold water .
  • Remove from heat and stir in pepitas and a pinch of peppercorns.
Cool
  • Line baking sheet with parchment paper.
  • Quickly pour onto prepared sheet, spreading as thin as possible.
  • Let cool until firm, about 10 minutes.
  • Finely chop brittle until it measures 3 tablespoons.
Combine and Serve
  • Arrange figs on a platter.
  • Top each with 1 teaspoon of Boursin Cheese.
  • Sprinkle with brittle.
  • Drizzle with oil and sprinkle with remaining peppercorns.
  • Serve and enjoy.

Tip

The brittle will start to stiffen quickly so ensure that your baking sheet is already lined with parchment paper before you start heating the brittle mixture.

  • 1/4 cup raw pepitas (pumpkin seeds)

  • 1/4 teaspoon crushed pink peppercorns, divided

  • 4 large black or green figs, cut into 3/4 slices, crosswise

  • Extra virgin olive oil

  • 1/8 cup of Boursin Cranberry & Spice Cheese

  • 1/8 cup granulated sugar

  • 1/2 tablespoon water

  • 1/8 cup raw pepitas (pumpkin seeds)

  • 1/8 teaspoon crushed pink peppercorns, divided

  • 2 large black or green figs, cut into 3/4 slices, crosswise

  • Extra virgin olive oil
