SWEET POTATO SLICES
  • Preheat the Grill — medium high heat.
  • Season chicken breasts with salt & pepper on each side, and grill for 5 min per side. Remove from grill & top with lime juice. Cool, then dice into small cubes.
  • In medium bowl, dice chicken into small cubes & mix with Boursin® Garlic & Herbs cheese.
  • Grill sweet potatoes in for approximately 5min, until char lines appear. Turn and cook for 3-5min on other side, remove..
  • Top each sweet potato round with Chicken & Boursin® mix. Garnish with paprika, parsley, mint & pomegranate seeds.
  • Serve warm.

  • 4 Medium Sweet Potatoes, sliced into 1” rounds

  • 2 T. Olive Oil

  • 2 Chicken Filets

  • 1 T. Paprika

  • Juice of 1 Lime

  • 5 Sprigs Parsley, diced

  • 1 Cup Pomegranate Seeds
