Veggie Burgers
  • For the pickled onions, thinly slice red onion, combine vinegar, sugar & salt in small bowl until sugar dissolves. Add onions and let sit at room temp for at least 1 hour.
  • While onions sit, heat large fry pan over med-high heat with 2 T olive oil. Sauté Shishitos until you see blisters in some spots, and some have started to soften. Remove from heat & let cool. Once cool, dice peppers and add to a medium bowl.
  • Add Boursin Dairy Free to medium bowl and whisk with peppers to combine.
  • Preheat Grill. Spread each side of bun with Boursin Dairy Free mixture and place face up on grill to toast. Grill Veggie burgers according to directions.
  • Assemble burgers, place patty of bottom bun, top with lettuce, 3-5 rings of pickled onion and bun top. Enjoy!
