Boursin Harvest Tortellini Salad

with Boursin® Bites Garlic & Fine Herbs and BUITONI® Tortellini

Who says pasta salads are only for summer? Fresh fall flavors, creamy Boursin cheese and colorful BUITONI tortellini make for a colorful pasta salad that can easily transform from hearty side to delicious lunch or dinner.

Your Turn To Create

For Pasta Salad
  • Preheat oven to 450° F
  • Mix sliced butternut squash & fennel with 4 tbsp olive oil and salt & pepper. Spread on sheet pan and bake for approx. 25 min or until golden brown.
  • Boil tortellini according to package directions; drain.
  • Mix roasted vegetables, warm tortellini, 1 tub of Boursin® Bites Garlic & Fine Herbs cheese, apples, and cranberries with olive oil. Season with salt & pepper.
  • Garnish with remaining Boursin Bites. Place on a sheet pan and keep warm in a oven while assembling the other bundles.

  • 4 cups butternut squash, 1/2” diced

  • 6 cups fennel, tops removed, 1/2” slices

  • 6 tablespoons extra virgin olive oil, divided

  • 1 package BUITONI® Refrigerated Mixed Cheese Tortellini (20 oz.)

  • 1/2 cup apples, quartered & julienned

  • 1/2 cup dried cranberries (optional)

  • 2 packages Boursin® Bites Garlic & Fine Herbs

  • Salt and pepper to taste
