A refreshing medley of sweet and savory, this Shaved Fennel & Grilled Apple Salad is a perfect balance of flavors. Crisp apple slices are lightly charred in a grill pan, complementing the delicate crunch of thinly sliced fennel. Tossed with toasted walnuts, fresh herbs, and a light vinaigrette, the salad is finished with Boursin® Caramelized Onion & Herbs Crumbles for a touch of creamy sweetness. Your Turn To Create

For The Salad
  • Spray a grill pan with cooking spray and place over medium high heat until hot. Arrange apple slices on grill pan and grill for 1-2 minutes on each side until grill marks appear. Set aside to cool.
  • Cut off fennel stalks and discard, reserving fronds. Using a mandolin or sharp knife, thinly slice fennel bulb.
  • Combine lemon juice and honey in a small bowl, slowly whisk in olive oil until emulsified. Salt and pepper to taste.
  • In a serving bowl, toss together apples, shaved fennel, walnuts, herbs and vinaigrette. Gently fold in Crumbles and fennel fronds. Adjust seasoning.

Tip

Apples can also be prepared on an outdoor gas grill set on medium high heat, if preferred

  • 1 tart red or green apple, cored and cut into 1/4-inch thick slices

  • 1 fennel bulb

  • 1/3 cup toasted walnuts (optional)

  • 2 Tbsp roughly chopped flat leaf parsley

  • 1 Tbsp chopped tarragon, optional

  • 1 Tbsp fresh lemon juice

  • 1/2 Tsp honey

  • 2 Tbsp olive oil

  • Salt and pepper to taste
