Heat oven to 400°F. Pierce potatoes with a fork in several places. Place potatoes on baking sheet and bake until soft, about 1 hour.
Remove potatoes from oven and allow to cool slightly. Carefully cut off the top third of each potato and gently scoop out cooked potato into a medium bowl, leaving about 1/2-inch shell intact. Discard tops of potatoes and put the potato boats back onto the baking sheet.
Mash the cooked potato with potato masher or back of wooden spoon, until crumbly. Stir in the Boursin® Cheese, and a pinch each of salt & pepper, until well-blended. Taste, and add a little more salt & pepper if you’d like. Spoon potato mixture back into reserved potato shells, dividing evenly.
Bake for 15 minutes or until heated through. Garnish with toppings, if desired
For a faster baked potato, follow these microwave instructions: Replace oven baking in Step 1 by piercing potatoes with a fork, and placing on a plate lined with two layers of paper towels. Microwave on high for 15 minutes, or until soft. Follow Steps 2 & 3 as written, but reheat in the microwave 3 minutes on high, until the potatoes are heated through.
