Spring Salad
  • Toast and then crumble the bread into bread crumbs.
  • Slice the beet into thin rounds.
  • Peel, halve, and thinly slice the onion.
  • Sprinkle bread crumbs in the bottom of each glass, then layer beet, onion and baby greens on top, in alternating layers until you reach just below the rim of the glass.
  • Shape Boursin® Cheese into round balls and place 2 on top of vegetables in each glass.
  • Top with pomegranate seeds, pepitas, pepper, and a drizzle of hazelnut oil.

  • 1 medium beet, sliced

  • 1 medium red onion, sliced

  • 1 handful baby greens

  • 2 Tablespoons pepitas
