Ingredient Preparation
  • Wash the spinach shoots and the arugula
  • Cut your tomatoes into 6 or 8 segments
  • Thinly slice your radish
  • Snap off the ends of the green beans and cook in salty water for 7 minutes
  • Shell the peas and cook in salty water for 5 minutes
  • Put the eggs in a pot of boiling water and cook for 6 minutes (so the yoke is runny), cool down in cold water then peel
  • Thinly chop the chives
  • Use a large round plate
  • Place the arugula in the shape of a crown
  • Add the spinach to the arugula (or mix them)
  • Arrange the green beans and the peas on the crown
  • Add the croutons then the eggs (sliced in two)
  • Place the tomato segments inside the crown
  • Place the slices of radish at the center of the crown
  • Sprinkle with the thinly chopped chives
  • Using a fork, grate the Boursin and sprinkle the “crumble” on the crown
