Padma’s Brunch Tacos au Boursin

Elevate your brunch with these simple and delicious tacos filled with eggs, scallions, spinach and creamy Boursin cheese.

For The Tacos
  • Heat oil in a 7-8 inch nonstick frying pan on medium heat.
  • Sprinkle 1 tbsp of scallions in the pan and let sizzle for a minute or two, just until wilted.
  • Pour in 1/4 of the beaten eggs and swirl the pan with its handle so egg canvasses the whole pan in a thin layer. Optional: Add a few dashes of hot sauce or Chile oil to egg.
  • After just 1 minute, cover the egg with a tortilla and press down on it, so egg sticks to it.
  • After just 30 seconds, flip the tortilla with a wide spatula, so the underside gets slightly crisp in the pan.
  • Remove from heat onto plate. Using the back of a spoon, spread a heaping tbsp of Boursin cheese across the center of the tortilla. Pile spinach leaves on top and fold left and right sides of the tortilla so they overlap in the center.
  • Secure with toothpick to keep bundled. Place on a sheet pan and keep warm in an oven while assembling the other bundles.
  • Stack warm bundles and serve on platter. Enjoy!
  • 1 tsp oil

  • 4 eggs, beaten

  • 4-8” flour tortillas

  • 4 tbsp thinly chopped scallions or chives

  • 1/2 puck Boursin Garlic & Fine Herbs Cheese, (1 tbsp per bundle)

  • 1-8oz bag of fresh baby spinach leaves

  • A few dashes of favorite hot sauce and/or Chile oil (optional)
