Boursin & Beet Bites
  • Heat oven to 400°.
  • Scrub the beet thoroughly and wrap loosely in aluminum foil.
  • Place the wrapped beet on a rimmed baking sheet and roast for 50 to 60 minutes. NOTE for faster cooking you can also dice then steam beets.
  • Removed beet from oven, cool and dice to very small cubes.
  • Toast pine nuts in dry pan over high heat, about 3-4 minutes.
  • Spread diced beets evenly on shortbread biscuits or crackers.
  • Top beets with 1 tsp Boursin® Garlic & Fine Herbs cheese.
  • Garnish each with a sprinkle of pine nuts and a small basil leaf.


To spread the beets neatly & evenly, place a cookie cutter on top of shortbread or cracker that is slightly smaller in diameter.

  • 1 box Boursin Garlic & Fine Herbs , crumbled

  • 12 store-bought shortbread biscuits or crackers

  • 1 beet, roasted & diced

  • 12 pine nuts

  • 12 sprigs of small-leaved basil
