Boursin Infused Soft Scrambled Eggs

Toasted baguette slices topped with soft scrambled eggs infused with Boursin, finished off with smoked salmon and chives.

Your Turn To Create

  • Preheat oven to 350 degrees Fahrenheit.
  • Slice baguette and arrange on parchment paper lined baking sheet.
  • Drizzle with olive oil.
  • Place in the oven and toast for 2-4 minutes or until baguette slices have turned golden brown.
  • Remove from oven to cool.
  • Finely chop chives and set aside for garnish.
  • Crack eggs and beat to combine well.
  • Slice smoked salmon into strips.
  • Add beaten eggs and butter to a cold small nonstick pot and turn on stove to medium-low heat.
  • Using a spatula, consistently stir the eggs as they slowly cook, be sure to scrape the sides and bottom of the pot so no large curds form. If eggs start cooking too quickly, alternate having the pot on and off the stove, mixing the entire time. Continue until small runny curds form.
  • Add Boursin, salt, and pepper and continue cooking and mixing until the Boursin melts and is fully incorporated into the egg. Remove from heat.
  • To serve, scoop one spoonful of the soft scrambled egg onto a toasted baguette and top with a slice of salmon and some chopped chives.
