Your Turn To Create

Squash
  • Cut squash in half and scoop out seeds
  • Brush insides of squash with olive oil and sprinkle with salt and pepper
  • Roast at 400°F for 30-40 minutes until squash skin is easily punctured with a fork
  • Let squash cool until handleable, then use a fork to separate strands into a bowl.
Vegetables
  • During the last 15 minutes of roasting squash, heat oil and butter in a large nonstick skillet over medium high heat
  • Add shallot and cook for 1 minute
  • Add remaining vegetables and sauté until vegetables are crisp tender, 4-6 minutes
  • Add 3/4 cup Boursin Garlic & Fine Herbs, stirring until smooth and creamy
To Serve
  • Add spaghetti squash strands to the skillet, mixing until all vegetables are coated in sauce
  • Adjust salt and pepper
  • Divide between four warm bowls, then top each serving with 1 Tbsp. Boursin Garlic & Fine Herbs and chopped basil

  • 1 (3-pound) spaghetti squash

  • 1 Tbsp. olive oil

  • 1 tsp. kosher salt

  • ½ tsp. freshly ground pepper

  • Vegetables:

  • 1 Tbsp. olive oil

  • 1 Tbsp. butter

  • 1 shallot, minced

  • 1 carrot, julienned

  • ½ cup sliced mushrooms

  • ½ cup chopped asparagus spears

  • ½ cup broccoli florets

  • ½ cup frozen peas, thawed

  • ½ tsp. kosher salt

  • 1/4 tsp. freshly ground pepper

  • 8.5 Oz Boursin Garlic & Fine Herbs

  • 1/3 cup chopped basil, for serving
