Summer Salad
  • Peel radishes and beetroot, wash and spin-dry salad shoots, remove skin from watermelon slices.
  • Prep radishes, tomatoes & cucumber.
  • In a small bowl, mix olive oil, lemon juice, and a pinch of salt & pepper. Whisk to combine.
  • In a large bowl or on large plate, toss together spinach, sorrel, tomatoes, radishes and cucumber with prepared lemon dressing.
  • Garnish with crumbled Boursin® Garlic & Fine Herbs cheese, sunflower seeds & chives. Serve immediately.

  • 3 Assorted Radish like red radish or watermelon radish. Use 12 small red radishes if that is what is available, Thinly Slice

  • 1 Beet

  • 2 Small Yellow Tomatoes, thinly sliced

  • 2 Small Red Tomatoes, thinly sliced

  • 2 Small Green Tomatoes, thinly sliced

  • 1/2 Cup Hothouse Cucumber, thinly sliced

  • 2 Cups Baby Spinach

  • 2 Cups Baby Red Sorrel, or any other spicy baby green like arugula or mustard greens

  • 5 Chives, diced

  • 2 T. Toasted Sunflower Seeds

  • 4 T. Olive Oil

  • 2 T. Lemon Juice

  • Salt & Pepper
