Eggplant Bites
  • Salt eggplant whole with coarse sea salt and let them sweat for 15 minutes.
  • Toast the pine nuts in a dry sauté pan for 2 to 3 minutes.
  • Rinse eggplant and pat dry, slice into rounds.
  • Sauté the sliced eggplant in olive oil for ten minutes.
  • To build the bites, top eggplants with Boursin Fig & Balsamic, pine nuts, and a drizzle of reduced balsamic.
