Orzo Pasta with Boursin Cheese and Roasted Butternut Squash

Butternut Squash
  • Cut squash into cubes
  • Season with salt and pepper; top with olive oil and mix
  • Place evenly on a baking sheet
  • Bake at 400 degrees for about 30 minutes – until tender and golden
Sauce
  • 10 minutes before the squash is ready, add butter and shallots in a large skillet over medium heat; cook until soft
  • Add garlic and Orzo pasta; sauté for about 2 minutes
  • Add salt and white wine; cook until wine is almost evaporated
  • Add water and bring to a boil; cook for 5 minutes making sure to stir occasionally
  • Whisk in heavy cream
  • Stir in Boursin Garlic & Fine Herbs cheese
  • Bake at 350 degrees for 10 minutes
Serving
  • Stir in cooked squash
  • Crumble pieces of Boursin Garlic & Fine Herbs on top; garnish with Rosemary

  • 1 small butternut squash

  • 2 tablespoons of olive oil

  • ¼ cup of chopped shallot

  • 3 garlic cloves, chopped

  • 1 cup dry Orzo

  • ¼ cup dry white wine

  • 2 cups of water

  • ½ cup of heavy cream

  • Salt and pepper to taste

  • Fresh rosemary
