Roasted Tomato & Boursin One-Pan Soup: Our Take on the Viral Tomato Soup Trend

Your Turn To Create

Tomato Soup
  • Preheat Oven to 425’
  • Unwrap & place Boursin Cheese in the center of an 8x12” or 9x13” ovenproof baking dish
  • Surround cheese with tomatoes, shallots, garlic & rosemary. Drizzle with olive oil and season with salt & pepper
  • Roast until garlic is very soft and tomatoes have broken down, 20-25 minutes
  • Remove from oven, remove rosemary stems and transfer to food processor or blender
  • Add basil, sundried tomatoes & balsamic vinegar, blend until smooth
  • Serve in bowls with toasted crostini. Enjoy!

  • 2 lbs Mixed Round Tomatoes- Roma, San Marzano, Heirloom, quartered

  • 5.2oz Boursin® Garlic & Fine Herbs Cheese

  • 8 Cloves Garlic, peeled

  • 3 Shallots, peeled, root removed & halved lengthwise

  • 3 Tbsp Diced Sundried Tomatoes (Optional)

  • 2 Sprigs Rosemary

  • 1 Tsp. Paprika

  • ¼ Cup Fresh Basil

  • 3 Tbsp Olive Oil

  • 2 Tbsp Balsamic Vinegar

  • 1 Pinch Kosher Salt

  • 1 Pinch Fresh Ground Black Pepper

  • 1 Crusty Baguette toasted for serving
