Summer Elote Salad
  • Cook the corn on grill or in pot of boiling water For Grill: place corn on hot grill in husks. Grill for 15-20 minutes, turning every 5 minutes. For Pot: bring large pot of salted water to a boil, add corn and cook until done.
  • Let corn cool, shuck & shave off the kernels. Set aside.
  • Zest, then juice 1 lime (you will need 2 Tbsp of juice). Slice second lime into wedges and set aside until you are ready to serve.
  • In a large bowl, combine red onion, Greek yogurt, lime zest & juice, smoked paprika, cumin, cilantro, and all but 2 Tbsp Boursin® Garlic & Fine Herbs Cheese, salt & pepper. Mix the ingredients, taste and adjust seasoning to liking.
  • Add warm corn to mixture, stir to combine.
  • Divided into bowls or serve family style. Top with chives and crumble the remaining Boursin® Cheese.
  • Serve warm or chilled with lime wedges on the side.


For easy corn kernel slicing, place base of shucked corn cob in a large bowl, then use knife to slice off kernels. No escaped kernels or mess!

  • 8 Ears Corn

  • 1 Medium Red Onion, diced

  • 3.5oz Plain Greek Yogurt

  • 2 Limes, divided

  • 1 tsp Smoked Paprika

  • 1/2 tsp Ground Cumin

  • 1 pinch ea. Kosher Salt and fresh ground pepper

  • 3 Tbsp Cilantro, roughly chopped

  • 2 Tbsp Chives, diced
