Twice-baked Potatoes Recipe

Bake
  • Heat oven to 400° F.
  • Pierce potatoes with fork in several places.
  • Place potatoes on baking sheet and bake until soft, about 1 hour.
  • Remove potatoes from oven and allow to cool slightly.
  • Cut off the top third of each potato and gently scoop out cooked potato into a medium bowl, leaving about 1/2-inch shell intact.
  • Discard tops of potato and put potato shells back onto baking sheet.
Mash
  • Mash cooked potato until crumbly.
  • Stir in Boursin Cheese and a pinch each of salt and pepper.
  • Taste and season accordingly.
Combine and Serve
  • Spoon potato mixture into potato shells.
  • Bake for 15 minutes or until heated through.
  • Garnish with toppings, if desired.

Tip

In a rush? Cook your potatoes in the microwave instead. Simply, place potatoes on paper towel-lined plate and microwave on high for 15 minutes, or until soft. Follow the remaining steps, except when reheating potatoes, put them in the microwave on high for 3 minutes, or until heated through.
