  • Heat oil in large pot over medium heat. Sauté onion & salt until soft
  • Add squash & cook 5 minutes
  • Add garlic, sage, thyme & broth. Bring to boil, reduce heat, cover & simmer for 30 min
  • Add coconut milk, 4oz Boursin® Cooking Cream, salt & pepper
  • Blend soup in blender until smooth. Season to taste
  • Serve with large dollop of Boursin® Cooking Cream, pumpkin seeds & sage.

  • 1 Large Yellow Onion, diced

  • 3 lb. Butternut Squash, peeled, seeded & cubed

  • ½ C. Coconut Milk

  • 3 C. Vegetable Broth

  • 1 t. Kosher Salt & Black Pepper
