Ratatouille
  • Using a mandoline or sharp knife, cut eggplant into twelve ¼-inch slices
  • Slice both yellow squash and zucchini into sixteen ¼-inch slices
  • Slice tomatoes into eight 1/2 -inch slices
  • Slice orange peppers into eight 1/4-inch slices
  • Arrange vegetables on a parchment-lined baking sheet
  • Drizzle with olive oil, sprinkle with thyme, salt and pepper and mix
  • Roast at 450°F for 10 minutes. Rotate baking sheets and roast for another 10 minutes
Assemble Towers
  • Start with an eggplant slice spread with a scant teaspoon of Boursin Cooking Cream, followed by a tomato slice, Boursin, 2 zucchini slices, Boursin, curled orange pepper ring, yellow squash, Boursin. Repeat stacking these same ingredients on top, ending with a third eggplant slice.
  • Follow this same method with remaining vegetables, building a total of four stacks
  • Place stacks on a parchment-lined baking sheet and brush top eggplant slice with olive oil.
  • Skewer with a toothpick or wooden skewer and top with a cherry tomato
  • Bake for 15 minutes
  • Serve each stack with a drizzle of balsamic reduction and warmed Boursin Cooking Cream
