Sweet Potato Rounds
  • Preheat oven to 400°.
  • Scrub the sweet potatoes and dry. Then slice them 1 cm thick.
  • Place potatoes on baking sheet and brush with oil. Bake for 12-15 min until tender.
  • While potatoes cook, break walnuts into smaller pieces.
  • Remove potatoes & cool.
  • Spread a large tbsp of Boursin® over each cooled potato slice.
  • Top with a cranberries and walnuts.
  • Finish with a drop of honey on each and serve!

Tip

Place the cranberries between two pieces of parchment paper and crush slightly with a rolling pin or wine bottle.

  • 1 box Boursin Garlic & Fine Herbs , crumbled

  • 1 thin long sweet potato, sliced

  • 1 tsp Peanut Oil, you can also use an olive oil

  • 12 cranberries, fresh or frozen defrosted and slightly crushed

  • 3 walnuts

  • 6 tsp of honey
